First things, first…its Wednesday! Yay for the week being half over already!! Since Jenn is challenging her readers to up the veggies this month I have been pretty conscious about including extra veggies with my meals and even adding veggies to meals that I would have otherwise left out.

My eats this week were pretty good so let’s get on with it!
Breakfast – Egg and cheese sandwich on an English muffin, turkey sausage, and pineapple
Snack – Apple slices
Lunch – Yummy salad with spinach, tomatoes, cucumber, carrots, broccoli and feta cheese, all topped with Honey Dijon dressing
Snack – Greek yogurt with some half-frozen blueberries
Dinner – Italian beef roast, brown rice, and steamed broccoli
Beverages – Coffee, lots of water, an afternoon cup of tea
In other exciting news, today Kyle and I FINALLY completed the license plate game!! We started playing on Christmas Eve 2010 when we were traveling up to his parent’s house and noticed a lot of out-of-state license plates.
I downloaded an app on my phone to track the plates we saw and today I was finally able to check off the last plate – North Dakota!! For the longest time we were missing North and South Dakota. We finally saw South Dakota a few months ago and that left just North Dakota. I was shocked when I pulled up behind a car at a red light with a North Dakota license plate. I texted Kyle right away to let him know we finally found all 50 states.
Question: Did you ever play the license plate game now (or as a kid)?

That breakfast sandwich looks so yummy! I remember playing the license plate game on long car rides as a kid… haven’t thought about it in so long. Sound like fun!

It figures that there’s an app for the license plate game now. Yes, we used to play that game when I was a kid on long car trips. Hawaii was the hardest one to get, I remember how happy were were when we found one. I’m surprised that wasn’t your last one, but North Dakota’s hard, too, not many people live there.
